¡Va a faltar carbón!, ¡Compraste poca carne!, ¡Son 250 gramos por cabeza!, ¡Si las minas comen como pollito!, ¡haz la técnica del maricón!, ¡Trajiste los fósforos!, ¡échale más papel!, ¡Lo estay ahogando!, ¡Petróleo (cerveza o vino, a veces piscola) al parrillero! ¡Tráete un palito para esparcir el carbón!, ¡Pásale una cebolla a la parrilla!, ¡Pero antes tienes que lavarla!, ¡Pincha la carne y los chorizos!, ¡tienes que sellarla!, ¡échale la sal altiro!, ¡Está muy fuerte el fuego!, ¡Le echo cerveza al fuego!, ¡Pónete el pollo y los chorizos primeros!, ¡ Trajeron costillar!, ¡A quién le gusta a punto!, ¡Salieron las carnes cocidas!. Son algunas de las situaciones que se vive en el proceso de realizar el asado. Debo resaltar que hay muchas formas de hacer asado y diversas técnicas. Les voy a explicar una de estas formas.
A Considerar
Comprar buena carne. El 80% de posibilidades de que la carne te quede blanda es la calidad de la carne. Prefieran carnicerías y ojalá de carácter regional.
A mi personalmente me gusta variedad en la compra de los ingredientes para el asado. Yo recomiendo: Truto Ala de Pollo, Chorizos de Pavo, Pulpa de Cerdo, Costillar de Cerdo, Palanca, Asado Carnicero, Sobrecostilla, Lomo Vetado, Entraña o para los más pudientes “Entrecot”.
Carbón preferentemente de Espino. Siempre es mejor que “so sobre” a “que fa falte”. Unos 6 kilos para parrilla de medio tambor de aceite.
Parrilla siempre impecable, lavada y limpiada, de preferencia con una cebolla o un limón.
El pollo se adoba con limón, ajo picado, orégano y sal. Las costillas pueden llevar sal y una salsa elaborada con miel líquida y mostaza (se las recomiendo).
La carne de vacuno preferentemente pura sal.
El Fuego es Fundamental
Para que se haga el asado lo fundamental es el fuego. Es fácil encenderlo, lo que si hay que considerar ciertos pasos. Primero tienes que idear una forma que el carbón reciba calor en una misma zona, por un tiempo apropiado. Recomendaré la técnica de “los lulitos”. Con papel de diario tienes que enrollar “a modo de trenza” papeles enteros de diarios. Mientras más grande el formato del periódico mejor, luego los amarras formando redondéelas. A continuación pones una sobre otra a modo de un gran resorte.
El paso siguiente es abrir la(s) bolsa(s) de carbón y empezar a construir por el lado de este resorte de papel una gran montaña con una apertura para “dar tiraje al fuego”. Lo mejor para realizar esta tarea es elegir los carbones más enteros para que sean la fortaleza y los cimientos de este volcán de carbón.
Luego se introduce un trozo de papel encendido por la apertura de la edificación, esperando que se prenda y agarre tiraje. Si es necesario ayúdate con un trozo de cartón para dar aire al fuego.
¿Cuándo está listo el fuego para el asado?
Cuando pones la mano y aguantas tres segundos sin quemarte. De lo contrario tienes que esperar que el carbón baje su intensidad. ¡No le eches cerveza al fuego!, es tan rica la “chela” que no se puede desperdiciar.
Lo primero que debes hacer es echar a la parrilla el pollo, las costillas (por el lado del hueso) y los bien ponderados chorizos o choricillos. Luego se echa la pulpa y al final, cuando resistas por 5 segundos la mano al fuego sin quemarte pones la carne de vacuno.
A mi opinión a las carnes se les echa sal “vuelta y vuelta”. Considerando la técnica del sellado, pones la carne a la parrilla… cuando comienza a salir jugo de la carne hacia arriba, le aplicas sal y luego lo das vuelta, finalizando aplicando sal por la parte cocida… y se acabó.
¡Ojo! que los chorizos y el pollo hay que darlos vuelta continuamente.
Luego a servirse y disfrutar.
